We’re Eating … Roasted Yams and Chickpeas



Several times since Little Thistle was born, I have taken advantage of the very convenient delivery service offered by Green Circle Organics, who also have a stand at our local market. They have several sizes of produce boxes available for home delivery, and also offer add-ons like breads, dairy, eggs, and pantry goods. This past week, I ordered the large produce box, and enjoyed the free delivery, which saved me the trouble of going shopping. I don’t mind shopping, but sometimes it’s nice to cut myself a little break. Organic vegetables delivered right to my door for a reasonable price is a treat for me, and I am happy this service exists!

This week’s box contained a recipe card with a recipe from Smitten Kitchen, one of my favorite food blogs. It utilized produce that was included in the weekly box, so I decided to give it a try. Hence, we ended up having Roasted Yams and Chickpeas with Yoghurt for dinner. I challenge myself to use all of the produce in the box before the week is out (and, of course, before it spoils). This recipe helped with that challenge, and was delicious to boot!

I wish I could say that I plated it as attractively as Deb of Smitten Kitchen did, but I was hurrying to get dinner on the table before anyone under the age of five started to cry. (The struggle is real). But, no matter how it looked, the taste was amazing. The yams were sweet and perfectly roasted, and complemented the savory, crunchy chickpeas and the tangy yoghurt-lime sauce (made with my favorite yoghurt, of course).  I served the dish alongside a fresh spinach salad topped with tomatoes, walnuts, and poppyseed dressing. Word.

Have you ever had groceries delivered? I say, bring back the milkman and all of his kind. (I first wrote, “all of his ilk,” but thought everyone would think I made a ‘milk’ typo. Moving on …). In conclusion, I give this meal a hearty endorsement. If you are looking for a tasty vegetarian (not vegan) meal, give this recipe a try!
